Naga meat pickle is not the sweet-and-sour pickle most people in the UK have met. It is savoury, fermented, and hot in a way that comes from Bhut Jolokia rather than from added heat.
Across Nagaland, fermenting meat is an everyday practice rather than a speciality. Each household has its own timing and its own balance of salt and spice.
